We're going back in time again to January 2021. We started off the new year with picking some new recipes to try.
Black-eyed peas and cornbread on New Year's Day.
We decided to find some new hiking spots around Houston. We were specifically looking for some new hiking trails within about 30 minutes of our house. Our first outing was to El Franco Lee Park, and it was fantastic!
The kids had one extra day of winter break, and Gene made high tea!

On another weekend, we visited the Challenger Seven Memorial Park in League City.
So many water birds along Clear Creek.
One of our favorite new hiking trails is down in Seabrook. Seabrook has tons of walking trails, but our favorite trailhead is at the Seabrook Wildlife Refuge.
We walk about two miles down to Pine Gully Park and it is just delightful.
Ruby is always exhausted after our outings!
Henry and I took advantage of a sunny day to head to Hermann Park.
On another day, we visited the Deer Park Nature Preserve. This was a tiny loop trail that is probably not worth visiting.
But, San Jacinto Battleground State Historic Site is nearby, and there are some lovely hiking trails there.
We also discovered Monument Inn, which has amazing seafood! We have never dined inside but Juan Seguin Park is across the street and it's the perfect spot for lunch.
Henry also went back to art class and made these adorable mice.
As always, we ate some really great food!
Caldo verde with sausage and crusty bread
Pizza
Haddock chowder in homemade bread bowls
Sunday dinner in the dining room
January was a really great month with great weekend weather so we could get outside and explore!
